Indonesia foods - fried duck

Ingredients fried duck:

    
* 1 tail (900 g) of the duck, cut into 4 parts
    
* 4 tablespoons vegetable oil
    
* 2 bay leaves
    
* 2 sheets of orange leaves
    
* 1 stalk lemongrass, crushed
Spices, pureed:

    
* 2 cm fresh ginger
    
Kencur * 2 cm
    
2 cm galangal *
    
* 8 cloves garlic
    
* 1 teaspoon shrimp paste Fried
    
* 1 / 2 c. Teaspoon coriander
    
EL * 1 tsp pepper
    
EL * 1 teaspoon sugar
    
* 2 c. Teaspoon salt
Complement:

    
* Sambal Matahi
    
ABU Yard Long *
How Balinese duck:

   
1st subtle spice duck stir until smooth.
   
2nd Let stand for several hours.
   
Third Heat the oil, put duck marinated, bay leaves, lemon leaves and lemon grass.
   
4th Stir until the duck stiff and discolored.
   
5th Pour water and let simmer gently until the meat duck.
   
6th Remove, let cool.
   
Seventh Heat oil over medium heat much.
   
8th Roast, dry to the duck. Remove and drain.
   
9th Serve with Sambal Long Bean and Matahi ABU.
Serves 4
